            How about other states?

            Maine[2] 47,066 3.73%
            New Hampshire[2] 24,697 1.98%
            Vermont[2] 9,543 1.61%

            Connecticut[2] 35,565 1.05%

(Louisiana has about 200,000 (4.5%) French speakers).

I don't understand why Europeans TDs insist on having 200 or 300 players (if not more), rated anywhere between 1000 and 2600, all in one section AND without accelerated pairings.

Look at the first 4 rounds for a GM like Lesiège. Barely any opposition so far and he's still a heavy favorite in his round 5 game.

Because if you ran the event the way you wanted to you would have about half as many players showing up. The opportunity for patzers to get a crack at a GM is one condition that attracts players to events. This fact is less understood in Canada.

Is that such a factor, really? Because there's counter exemples, such as the big opens in the US and the Mauricie Open here in Québec. Narrowing down the sections by ratings also attracts players.

I'm not against having just one section, but accelerated pairings are an absolute must, then.

Because without accelerated pairings, a very common occurence is the yo-yo pairings, whereas you play against a guy rated 300 points below you and win, only to lose to a guy rated 300 points higher in the next round and so on.

How'd that big favorite work out for him?

Different chess markets want different things. Maybe this one wants the patzers to have a shot at the GMs.

Round 5 - Alex lost to an Italian FM. He is behind four 5/5's and four 4.5's.

Well, yeah, these things happen when you repeat the 'experiment' long enough.

Play one game against a guy rated 300 points below you, your expected score is 85%. Quite enough to be considered a heavy favorite.

Play 6 or 7 games against guys rated 300 points below you, you're bound to let one slip at some point. That's just perfectly normal.

300 points difference doesn't mean 100% chance of winning for the higher rated player. It means getting roughly 8.5 points out of 10 games.
